Firstly there really is no such thing in GLB as a coverage Sack.
If a DL is going to beat the OL then it happens pretty quickly (Except in first season teams, where speed might not be high enough.)
Secondly you need to KNOW the playbook,
* What are the primary routes, (WR1, WR2 etc)
* What gaps in the defense do they exploit.
* What is the timing of each play (How long do the DBs need to cover in man if you blitz and how long would the pass rush have to get there?
* How often does the opposition QB scrammble?
If the opposition use quicker plays then the Blitz is not going to work.
If the QB scrammbles out of the pocket then you have to commit a LB to Blitz.
With regards to the 5WR set, your options are reduced by the tools you have to hand.
You need to decide based on the above if your CBs are able to man up on the WRs, and if they can make it to the QB in time.
You need to know if your Safeties have the range to cover the Deep streak if your playing Cover 2, as the CBs are NOT going to be playing Man coverage on them.
Then you need to ask if your DL can beat and overload the 5 man O-line on their own.
If so, a 3-3 or 4-2 with all LBs blitzing gives you a 6-5 match up.
Experiment and you'll find the most consistent way to get that pressure there before the QB gets the pass off.
Of course that leaves you 5-5 against the WRs, which is a tough call, but one to be considered.
If not your options are reduced to 317, 326 or 416, all have advantages and disadvantages.
I even played once with a 34 Cover 4, Zone Under, Weak Shift, ROLB Blitz.
And that worked great, in ONE game for one certain down and distance, because I knew they were trying to go for the longest pass possible and the LB had all day to get to the QB and no one blocked him.
There are 100's of different ways to play the 5WR formation and they are all based around your personnel and preferences.
Good Luck
