In this play, another CB blitzed, leaving my CB (ack corner) to choose between two WRs. He ended up choosing poorly, picking the short route a LB could have handled and leaving the WR going deep wide open for a TD.

Is this just a weakness of calling this blitz against this offensive play in our current sim environment, or is it something where my CB would have covered the 'correct' WR if he was built differently? If it's build, what attribute 'fixes' the problem -- vision? confidence?

That is completely the fault of the plays designer.

on a 5 wide set? that play is horrible. he needs to go 3-1-7 cover two blitz the middle linebacker.

Cornerback blitzes are best on 2 w.r. sets or 3 w.r. sets. you can play 3-3-5 cover 0 and blitz about 1-2 corners the middle and R.O.L.B. with a weak side shift, stack the box so the free safety come up naturally and takes over coverage on the w.r. that the corner abandons.
