Okay, what is the difference in build between an ILB and a MLB? Are there real differences, or can you put players built for MLB in the ILB position? Are they interchangeable, or do they need to be built differently?

I think they are pretty much interchangeable. Although you'll want your MLB with the highest strength at the LILB spot since that is the predominant strong side in most formations.

strength is irrelevant to how you position your linebackers. mlb and ilb is basically the same position with the difference that in the 3-4 your backers will get engaged by linemen more than the mlb will in the 4-3, which should point to the obvious difference.
