Can someone please explain the difference between having all of the CBs in the CB postion and having them in the CB1, CB2...etc positions? What are the benefits of both?

Legacy CB position is good to use when you have a solid set of CB's and you want to get them all similar playing time.
CB1 covers on WR1
- typically the best shutdown CB will play this slot.
CB2 covers on WR2
- typically your second best CB build will play this slot.
CB3 covers the Slot WR or WR3
- typically your third best CB build will play this slot.
CB4 will cover WR4 in 5WR sets.
- Put one of your weaker CB's here.
CB5 will cover WR5 in 5WR sets.
- Put one of your weaker CB's here. I have seen a lot of teams use a FS, SS or even a WR to help fill this spot if they only carry 4 CB's on their team.
If you have a returner that is a CB, and they have a solid build, but demand to return kicks/punts, I put them at CB3. That way they still get plenty of plays and have enough energy to be effective throughout the game.

Having them in the CB1, CB2, etc slots prevents a lower level CB from going against a WR1. For example, you 2 best CB's are tired [per Energy Settings] and the CB3 is matched on the WR1, you would then have your CB4 match-up on a WR2. Defining the roles prevents that, though it may send out a "tired" CB to line up.
If all your CB's are high-quality and similar level, then use the CB menu.
