Basically I've tried all different ways to stop the pass. Zone, Man, different coverage schemes and formations to set up double teams. Nothing seems to work unless you have a decisive advantage at CB over the WR. Basically if the CB is evenly matched or is lower than the WR he is man covering, there is no way to stop him through the AI, that I can figure out. Double coverage has absolutely no advantage I can see and zone underneath is horrid in my experience.

We had the same problem last season.
We turned it around with lots of pressure. Learning the proper blitz package/formation goes a long ways.
I know what you mean about needing a decisive advantage at CB. WR seems to make catches no matter how well they are covered. For the defenses backs, I believe the combo you need to help knock down those balls are these:
Vision / Jumping and Swat Ball SA.
My CB Pass defended stat went from 16PD last year to 37PD this year. Only thing major I did was increased my jumping by about 15SP and and adding the Swat Ball special ability (its up to 4 right now). It's hard to say how much a factor our added pressure was but I am quite sure this is the right combo to help out the DB's.

It can help if your CBs are set to Go for the INT if they have help over the top.
Ideally, it will result in more PDs and INTs.

The key is to put pressure on the QB using a heavy dose of ROLB blitz. Most teams play their TE on the LOLB side, so set LOLB to pass, then set ROLB to run focus, and blitz him 100% on most plays.
