Okay, hear me out.
When a WR is made, he has an "overall scouting report"
One can assume that this scouting report is greatly influenced by basically two things: Catching, and Speed.
(there are sub divisions like carrying and jumping)
If a WR catching is higher than everything else, his overall scouting report will look as follows:
Recieving>Carrying
However, if Speed is higher than catching, than the scouting report will look as follows:
Carrying>Recieving
When a sim plays, it is quite possible that it takes into account this "Scouting report" much more than the actual stastistics, because that would simply be easier! The Scouting report does what the sim doesnt want to do, sums up all the players attributes into one general attribute. Therefore, players that don't have alot of points into catching, but alot of points into speed or agility, they will get screwed over! For the sim percieves this player as a bad "reciever" and a good "carryer", and will possibly result in more drops, less getting open, and worse WR.
