If I am a DC and I adjust the Auto Adjust Intensity setting does it affect the offense as well? Or does the OC have a similar setting?

It impacts both if either the OC or DC is using the basic AI. If you have a complex advanced AI, I think those instructions take precedence over the autoadjust.
Most teams turn the autoadjust off so that they dont deviate too much from their gameplans.
