I hope if/when Bort starts looking for new developers you don't do the interviews!

Good idea! This is taking a ridiculous long time. That should make the process much quicker.

I have my chat logs on each interviewee and I have been making mental notes on them all but I'm not going to officially remove any of them until I'm done. This is actually a very normal interview process for most companies.
You have your interviews. You line up the applications with the interview notes and start throwing the bad ones in the trash.
This isn't to say, that during your interviews you don't know who some of "the bad ones" are. You just don't invest any energy into make that decision until the very end.
I'm Mr. Grumpy Pallow if you didn't notice.
