Because most people don't. It's a fluke result that only happens if the CPUs get some crazy scaling. It rarely is, which is why awful human teams beat CPU opponents at an even higher frequency than good ones.
I understand they are scaled up and down based on the competition. The better your team the better the CPU dots you play against will be as well which is why you can't "assume" you will win. I will bet you anything they didn't bother to "tag" any of those CPU dots therefore the AI that is normally used was not used against the CPU team.
That undefeated team said they had set tags and used their normal AIs.

You're assuming that their tagging and AIs were any good in the first place. The fact that they were in Competitive and not in Elite suggests otherwise.
As I said before, being in Competitive means one of three things happened to that team the prior season: 1.) they weren't even on the playoff bubble in Elite and demoted down, 2.) they were mediocre in Competitive and neither promoted nor demoted, or 3.) they made the playoffs in Regular as a low seed, lost in the first round and promoted up to Competitive but not up to Elite. The same is true for all of their opponents in Competitive as well, which means they're playing a very weak schedule. And going 16-0 against a weak schedule means nothing; there are quite a few teams who dominate in Competitive leagues and get their asses kicked in Elite leagues.
So, no, being undefeated in Competitive means nothing. I would expect someone like you to have higher standards, jdbolick, but if you really want to be impressed by a team going undefeated against inferior competition, I guess that's your right. But I won't be so easily impressed.
Now, go find me an example of a good team getting beat by a CPU team, or GTFO. If this is such a major problem, you ought to be able to find me one example fairly easily. Go do it.

CPU wins are rare anyway, but they happen more often against human teams with decent records because of the scaling.

Oh, and my team beat the CPU team ( I think, it was 2 of them in championship games so not sure which one) for the Championship BTW
