There are *very* few high level pure elusive backs that I know of with 70-80+ agility. There really is no yard stick to measure vs all of the high level comb backs, so it's really hard to compare them. Of course, statistics are only a small factor of how effective a build is. The biggest factor is the offensive line you're rushing behind, and the defense you're up against.
I'd really love to see a game where you play a well build and managed rush defense of the same level or higher, and manage 8ypc. In my experience, that won't happen unless you play a team that can't game plan.
You certainly won't be juking everyone out there. The object is to juke, break a tackle using agility/carrying, or spin off of as many (or more) defenders as an equivalent level combo or power back would.
I'm a bit of a purist when it comes to building elusive backs. I honestly haven't seen many people stick to the formula of a pure elusive back, and I plan on doing so with my hb's. I've got elusive backs with 70 agility with eqpt, and 70 agility without equipment. One is more heavy on SA's than the other but I intend to see which works better in the long run.

Oh, but wait.. you're basing all of this on your team's performance vs cupcake gutted teams. Look at your game log. You average 1.5-4 ypc vs well matched teams, just like everyone else:
