I shifted my guy from 48 agil/74 speed to 54/68 via equipment thinking that agility would be more important with the new changes, but he's having an even harder time getting open now so I think I'm going to switch it back.

My assumption (and note I say assumption) is that agility is more important in general now but not super duper important like everyone is making it out to be. If you end up not going high agility, get your first step up and that will help.
Agility also helps in YAC and route running though.

We had this one my team as well during our last game. We can't trust the visual display; it's always going to be off, but the CB flat out came from behind by 10 yards and caught the WR. I was wondering if this is the CB SA CLOSING SPEED being increased?

actually, it looks like your guy slows down to catch the ball and that allows the CB to get slightly ahead causing your guy to want to veer to the left, but he sees the LB coming up (who appears to have decent speed) which causes him to go into the dreaded "stutter step".
My guess is your guy has his running style set to elusive and he was too busy looking back and trying to find the perfect path instead of just stepping on the gas and going.
Stamina could also be an issue in that he has a good deal so he could be playing at his top speed, while you are somewhat diminished.

Does he have high vision? At times it seems like the more vision you have, the more tiny adjustments you make.
