Actually, you're exploiting a weakness of the SIM:
As soon as a WR of low speed is up to a high speed CB (50+), the SIM forces the CB to backpedal with all his speed - naturally giving up unreal cushion. That even happens if the CB is set to close coverage ("stick to your man like glue" - what a joke on that plays). So that WR is always open.
So the great plays of this WR are not about catching, but because of low speed and the SIM failure. Get his speed in the upper 30s and see if he can still do fine (should do well - maybe even great, but please eliminate that SIM-bug - it's not fair).
