I don't understand the issue. We had a 5-2 defense as a 3-4. You just had to move the LBs up on the LOS.

why would i use a coverage LB as a lineman?

If you need 5 DL on the field use the small GL formation.

Not sure what the excitement is about the 5-2.

I have literally one 5-2 play with the DEs covering flats and that's pretty much it.

You sent them into zones, very, very bad idea. Be far better off using additional LB or CB if you want to do some zone coverage.

It's to stop off tackle and outside run. DTs don't get a pass rush for shit...
