In all seriousness, there's no one simple answer to dealing with a rushing QB, because every team uses their rushing QB differently.
The dumb teams only trot them out on QB outside runs plays and bench them the rest of the time; those teams are easy to plan against, because all you have to do is scout them, figure out where the QB is gonna go, and send some defensive guys to meet him there.
The smart teams use their rushing QB on as wide a variety of plays as possible, and that's when you have to be careful. Blitzing into the backfield from the edge can work, but your blitzers will be useless against any inside runs. QB Spy only works if your dot starts in the middle AND is fast enough to beat the QB to the edge, and if it's not a QB run he'll have to pass a Vision check to get out of Spy mode... a Vision check that seems to be so difficult to pass that many a DC has uttered the most profane oaths imaginable as they watch their QB-Spy Free Safety turn into a blithering idiot against a simple HB off-tackle play.
In the end, there really is no substitute for scouting your opponent, noting their tendencies, and designing your defensive plays accordingly. There will be times when blitzing is the best approach, times when QB spy is appropriate, and times when both of those options are the absolute worst thing you can do.
