It really should be 1 HC, 1 OC, 1 DC, 1 ST coach and x number of assistants. This should not only be possible to assign either/all coordinator titles to the Owner/Co-Owner, but the positions of coordinator should be a prerequisite for having access to AI,depth chart, etc. imo.

better yet... since people can have their system on their personal tactics now, it shouldn't be too hard to give a trophy if a team using their system for at least 50% of the games won any kind of awards / trophies etc

This would also solve the problem of an Owner/Co-Owner who runs the Offense/Defense not being recognized because they don't wear the OC/DC tag.

honestly I'd do both the let owners/co-owners/HCs etc be OC/DC as well as the assign based on team using their AI...

The multiple titles serves the purpose of trophy identification, as well as recognition etc, and there's no real reason I can think of to not let them have multiple titles

#1 O in the regular season - OC trophy
#1 D in the regular season - DC trophy
#1 STs yards gained/lost - STC trophy

Blowout adjusted stats would need to be used.
