Here's the thing; if there was more flexibility in the AI's, they could possibly do away with the need to tag most of the time and it would lead to a man-on-on situation where the correct guys are all on the field to guard whichever package is out there. It might just be a matter of intense scouting and defensive play creation based on formations.
When it comes to tagging from what I've seen, 20% know how to do so effectively. The other 80% doesn't have a clue. But even with the point of the Big I Formation, the flexibility of having the exact right players on the field for that formation could do away with the need to tag anybody unless there is also a running QB on the field in that package.
