I get the basic reason of why... it would be a bigger headache for the coders to work with than just changing the weight of players would be. But if the argument of "players don't get taller IRL" is used, then it makes less sense as, according to GLB, players that start at level 1 are considered "sophomore's" (as in College Sophomore's), then IRL they'd still be growing.
But yeah, there's some possibilities here no matter what.

Not only an honest one, but a good one as well. If any advantage you could get/lose by changing a dots' age is superficially small, then the cost to gain such a benefit would be too much and therefore a lot of work would go into making this change... only to see people abandon it as they figure out it's just not worth it. Wish I had a quality answer for you, but I'm not a GLB programer.

Over 1 season it may not be. But if you wish to reduce the weight of the dot over a couple of seasons it would be worth it if that is what you wish to do. It is not hard to lose 10 pounds in the offseason. Years ago my brother was my LT. He decided he wanted to play End and he dropped 30 to do so.
