There's a ton of nuance to dot-building, but in the end, most of it only makes a slight bit of difference.

We delude ourselves into thinking that additional point of kicking will make a difference and then my kicker who's in massive decline goes and has his best season ever...AND manages to average 63 yards on kickoffs with effectively 60 strength.

What if I am still capping something else?

Current build
punt 91
strength 81
confidence 65
vision 63
agility 32
jumping 30

If I continue to train vision until confidence is 81, vision will be near 73. lol.

The question becomes is the saved SP from capping and continuing to train worth more than having confidence maybe one point higher. That's only a question you can answer. Note also that just because you spend 6 SP in the middle of running confidence up will not automatically make confidence lower end game. You just have to run the calcs.
IMO, I'd take the saved SP over the additional point.
