The safety position is named as such for a reason. If you would rather have them in man coverage, either run cover 0 or blitz your CBs in which case the safeties will pick up WR coverage (most of the time). Or run a cover 1 and blitz the FS. You are taking a lot of risk if you do any of that regularly (against equal competition anyways).
My suggestion would be work on the DB builds. Make sure all DBs have enough speed, agility, and vision. If they do, you should be fine.
