Grilled Pears & Ham with Maple Glaze

6 tbsp pure maple syrup

1/4 cup butter

2 tbsp yellow mustard

3/4 cup ground allspice

2 large, ripe Bartlett pears, cored and sliced ¼ to ½ inch thick

4-6 individual ham steaks, about ½ inch thick

Prep time: 10 minutes
Cook time: 20 minutes

In a small saucepan, combine syrup, butter, mustard and allspice; cook over low heat for about 5 minutes. Place pear slices on grill over medium hot coals for about 2 minutes per side, basting with maple glaze during cooking. Remove from grill and keep warm. Cook ham steaks on grill for about 5 minutes per side, or until heated through and lightly browned, basting with glaze once or twice. Place ham on a platter and top with grilled pears. Drizzle glaze over top. Pork chops may be substituted for ham. Increase grilling time to 10 to 12 minutes per side.

Makes 4 - 6 servings.

1 cup water
1 1/4 cups sugar
3/4 cup hazelnuts
1 tablespoon unsalted butter
6 firm-ripe Bosc pears (about 2 1/4 pounds total), stems intact
3 tablespoons hazelnut-flavored liqueur (preferably Frangelico)
2 tablespoons fresh lemon juice, or to taste
1 teaspoon vanilla extract

In a small heavy saucepan simmer water with 1 cup sugar, stirring until sugar is dissolved. (Syrup may be made up to this point 2 days ahead and cooled completely before being chilled, covered.)

Preheat oven to 350° F and lightly butter a shallow baking pan.

Coarsely chop hazelnuts. Stir nuts into syrup and simmer 1 minute. With a slotted spoon transfer nuts to baking pan, arranging in one layer, and reserve syrup. Cut butter into pieces. Bake nuts in middle of oven until golden brown, about 15 minutes. Immediately add butter to nuts, tossing to coat and separate, and with a spatula transfer nuts to a plate to cool (nuts will crisp as they cool). (Nuts may be candied 2 days ahead and kept in an airtight container in a cool, dry place. Reserved syrup may be kept, covered and chilled, 2 days.)

Lightly butter a shallow ovenproof kettle or casserole dish (about 12 by 2 1/2 inches). With a sharp knife trim a very thin slice from bottom of each pear to enable pears to stand upright. Dip and roll each pear in reserved syrup to coat completely. Transfer pears as coated to kettle, standing them upright, and sprinkle with remaining 1/4 cup sugar. Add liqueur, lemon juice, and vanilla to remaining reserved syrup and pour down side of kettle or casserole.

Roast pears, uncovered, in middle of oven until undersides are tender when pierced with a knife, about 30 minutes.

Arrange pears on a serving platter. Spoon syrup around pears and sprinkle with candied nuts. Serve pears warm or at room temperature.

This pear loaf cake recipe is a vanilla loaf cake made with butter and vanilla, along with chopped pears and brown sugar cinnamon streusel.
Ingredients:

* 2 medium pears, peeled and cored, chopped
* 1 teaspoon lemon juice
* .
* Streusel
* 1 cup all-purpose flour
* 1/2 cup light brown sugar, packed
* 4 ounces butter, cold, cut in small pieces
* 2 teaspoons ground cinnamon
* 1/3 cup chopped pecans
* .
* Cake
* 2 cups all-purpose flour
* 3/4 cup granulated sugar
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 2 large eggs
* 1/2 cup milk, whole or low fat
* 1 1/2 teaspoons vanilla
* 4 ounces butter, melted

Preparation:
Grease and flour a 9x5x3-inch loaf pan. Preheat oven to 350°.

Toss chopped pears with lemon juice in a bowl; set aside.

In another bowl, combine streusel ingredients, except pecans, with a fork until crumbly, or pulse with food processor. Stir in pecans, if using.

In a mixing bowl, combine flour, sugar, baking powder and salt; stir to blend.

Whisk eggs in a mixing bowl until blended; stir in milk, vanilla, and butter. Add to flour mixture and fold with a wooden spoon or spatula just until dry ingredients are moistened. Spoon half of the batter into prepared loaf pan; spread out to cover the bottom. Sprinkle batter with half of the pears and half of the streusel. Spoon remaining batter evenly over streusel, spreading carefully to cover. Sprinkle with half of the remaining streusel, the remaining chopped pears and then the remaining streusel.

Bake for 1 hour 10 minutes to 1 hour 20 minutes, or until a wooden pick inserted into center of cake comes out clean. Cool in pan on a wire rack for 10 minutes. Run a knife carefully around sides; invert the cake onto plate. Turn the cake, streusel side up, onto a rack and let cool on a rack completely.

Lawdawg good game Tick is simply amazing and I am just glad we were able to slow him down in the second half. You have a very good team as was proven by some key wins throughout the season. Good luck next season and hopefully things will be a bit tamer.

GG SDL. Hell of a game plan today. I thought about going more inside and in hindsight should have. Fumbles sucked, but it was still a great game plan.

GG Roughnecks....gameplanning for Tick is a nightmare, even when you call a good defense he can just beat your players straight up anyway. Glad my defense was able to at least contain him long enough to tire him out and effect his confidence with some of the TFL's...cuz that's all you can against a player like that.

GG and Good Team, respect
