Will that affect their stats?

Based on the fact you signed up in 2008, I would wager a guess that you've recently come back after some time away....? How long have you been gone? It looks like you retired whatever old dots you had...It would be best to retire what you've made and wait until day 40 of this season to create any new dots, as this is the time when any dots for the following season are created

I went ahead and created 2 new level 4 players and already signed them to a CPU team. Should I just wait for a new season?

yes, wait until D40. Everyone creates players for new season this day (D40 - D48 are the days you can create players).

Well shit. I made a brand new player who's already played a game, (3 catches and a TD) will he still be viable? As in will he still be playing in a rookie league next season with similar levels?

You've lost an entire season of training gains...so, like mentioned. retire them on d40 and rebuild on d40 after retiring them.

What about creating a team? Can I go ahead and get started on that?

If you mean buying a team, absolutely yes. You want to have everything in place and ready to go BEFORE day 40. Gives you time to request demotion to Rookie (unless you buy a rookie team) and get to getting commitments from dot builders and coaches. Wait to late and you'll feel like the off season is WAAAAY too short.
If you're just building dots, the night of day 39 and anytime between day 40 and day 47 works to build.

Day 47? I mean, day 48 is cutting it close, but does that not work also?

It does but I hate cutting it too close. Shit happens waaaaaaaay to often, not just here but in your outside life as well. Next thing you know you're screwed and don't have time to fix before next season happens.

you can build up to day 0, just have to catch up on boosts at the end
