I'd suggest making the player slower with less agility to attract more targets. If he covers too tight, he'll get avoided because of how QB targeting works (distance from defender being the primary factor).
I'd get jumping, vision and speed all in the 90s and shoot for 80+ catching. Hit agility 5th and leave just enough time to hit 60 Stam. Tackling and strength will suffer, but that what's called "a business decision" as Deion would say.
