Anyone have a blocking WR? I'm trying to figure out how to input them into the OAI for rushing plays, but not have them on the field for passing plays. Any tips? What has worked for you?

There's no way to have them come in just for rushing plays.
My best advice would be to cluster them in a WR slot where you can avoid progressions to them.

This is why high strength blocking WR's are generally bad. It's hard to micro-manage them, and not many OC's would take the time to build a game plan around it, tweak the energy settings, etc.
I do, however, enjoy having two WR's with ~30'ish str, giving them 5 VA's in Outside Blocker, and putting all of them exclusively at WR1 or WR2. Depending on what I see from the opp's defense, I'll commit all my outside run plays to one side of the field towards the direction of my blocking WR's. Generally, this works because CB's lack str, so it's easy to push them around. I'm not looking for a pancake. On the contrary, getting a pancake is bad, because the WR will leave his man, then when the pancaked defender gets up, he's undefended.

Btw, if your OC adds all the blocking WR's to one slot to force them in, he should avoid throwing to the slot with WR's in it, since they won't be as productive as other WR's focusing exclusively on spd, agi, etc. Use custom progressions to save their read for last and favor other receivers instead. Also, avoid plays including the intended route of your blocking WR slot.
It's a bitch to all setup. Makes you more one-dimensional too. You gotta mix it up, since a good DC will see you always directing runs to one side, so this means swapping your blocking WR slot and redesigning your plays to avoid the new slot you switched to. Of course, in CPU games, use a false tendency A.I. to mask your gameplan.

The casual approach when you have them + catch WRs (and no way to alter progressions) is to start the receivers and then force third down starters. The starters are tired usually on 1st and 2nd when you (mostly run), and then the catchers come in on 3rd down.
But what Romo said is best. You want 2 or 3. I suppose you could ignore jumping and catching in a build and take stamina to 75-80, thus only needing one....maybe, but then you'd be forced to only run behind that one at say WR3.

This worked for me as a dot builder. I used a Power receiver for my build type. Built him like a TE (very tall, and as heavy weighted as I could go)... got his speed up to where it was going to be serviceable at plateau (somewhere around 140 with EQ/AEQ). Strength finished at 80... jumping at 70... catching at 75... agility right around 90 (mighta had a spare point in EQ slipped in to get him to 90)... blocking to 50. Overall, he's NEVER going to be a superstar DOT. But he blocked very well and, once he got close to plateau, he became quite serviceable as a receiver because he simply out leaped and out muscled the defenders around him. A good "go to guy" when you only needed 10 yards or so... but never going to break off an 80 yarder on anyone.
This way he didn't have to come out all the time and he worked just fine. Again... you gotta know you're going to give up something to get something in return... you just don't have to give up EVERYTHING.

I would do it by:
1) use ST archetype for the blocking WRs
2) divide blockers/catchers and assign on depth chart to slots so that each group only lines up on either strong (WR2,WR4,WR5) or weak side (WR1,WR3)
3) switch this around randomly from game to game so sometimes blockers are 2,4,5 and sometimes 1,3 (make sure to use a preset depth chart)
4) don't use any SBTrips plays, but pretty much anything else with WRs would work
5) run to the side where the blockers are for that game
6) use custom checkdowns to direct the QB to only throw to the catcher guys and/or TE/HB/FB as applicable
7) make sure your have auto-adjust set very high and a good mix of other plays because if an opposing defense does their homework they can shut this down. but would work well vs lazy opponent.
