Should all receivers have these two or just Poss receiver?
I notice many knocked loose passes in the sim lately.

I personally don't worry too much about the KL rolls. Nerves of steel is just taking away from a good stack of any sort. Poss WR is only good because of the catch bonus to passes under 8 yards to which I don't use many passes under 8 yards to WR's anymore so I wonder why I even bother sometimes.

Does Poss Receiver work on TEs FBs HBs?

Just TE's. It is great for TE's since a lot of their routes are under 8 yards.

Maxed out Nerves only reduces KLs by 22.5%, Most receivers that amounts to around 1 KL per season. HIgh volume guy maybe 2 per season. Poss WR seems to be closer to half your KLs, but again, that might only be 3 KLs per season.

My low strength/carrying slot WR had 64 catches/12 drops last season without Poss WR, and 45 catches/5 drops with it this season. Might have got him 4 more grabs.

I like Nerves of Steel on TE's I OC, since they're typically manned against stronger LB's or hard-hitting safeties.

Poss Receiver is dependent on what you do as an OC. Obviously, if you run the ball a lot or throw deep, the VA is useless. Not me. I love watching defensive replays, then exploiting them by throwing in/out routes and/or slants for quick gains. Only time I go deep is when I have to.

It is my understanding that the KL protection is not included in the 8 yard limit.
