Whatever you want them to do.

Titles are completely unofficial, although some titles do automatically come with certain levels of access to certain areas of the team. But that's it. Your team's Head Coach does whatever you do -- or don't -- want them to do.

We use the Head Coach position as kind of an overseer of builds at the lower levels and to make sure and keep things in check like making sure that everyone is on the depth chart at the higher levels.
Maybe even let him do player of the game posts or something in the forums to keep people active in the team forums.

The Head Coach should be someone that has done both sides of the ball and special teams. He should steer the team on a common theme of builds based on the type of offense and defense that team is running.
He should check to be sure that AI's are in place for each game that any scouting/tagging has been completed.
He should be able to take the reigns in case any of your coordinators is out.

Thats what a head coach should be. But like Novus said, its really up to you.

I use the HC as the head lolGM.

Whoever is best at giving head on my team usually gets the HC spot.
