What's the difference in builds, I want to stay on track with man coverage but what's the difference?

zone will have less agility, more speed and vision... and maybe less jumping, more tackling, mainly because of ALGs (given you are going with the zone archetype, but you can make one with the man archetype as well) really, the build itself wont differ too much (except maybe in SAs in that you will have ZS instead of SDC, and maybe also get some CS)... most of the difference will be in the way you use your EQ.
for a zone CB, i would try to look something in the ball park of this:
140 speed, 80 agility, 90 vision, 70 jumping, 60 tackling, 50 strength, 55 stamina, 50 confidence, SAs: SB (8), SV (8), CD (6), CS (w/ AEQ, so 2+6=8), ZS (8).
i only go to 8 because i dont think a point of SAs is worth 5 SP, and 8 is already pretty high, and if it is your favored SA, that will take you to ~10.
