Analyzing would be too much work for such plebeian tastes on this forum. If someone wants to step their cheese game up i'm open to helping.


You can probably find these at a local (good) cheese shop or if you have a good whole foods near you. No specific order. These are amongst my favorites but some that are reasonably obtainable

Category:

Soft Cow's Milk
- Langres
- Red Hawk
- St. Marcellin

Blue:
- Rogue River Blue
- Bleu d'Auvergne
- Valdeon

Sheep:
- Petit Basque
- La Serena
- Tomme de Brebis (the vermont version is nice for local but french is fine too)

Goat:
- Monte Enebro
- Tomme Fleur Verte
- Chevrot

Random:
- Quardrello di Bufala
- Bethmale
- La Tur
