I'm trying to build a balanced WR. Just curious as to how much blocking and strength you guys think is necessary.

If you raise strength to 40-50 ish by the time your build culminates and you train blocking up that should be enough to (most of the time) hold your block for as long as is necessary.
If you want to do any type longer-duration blocking stamina and confidence become more important stats because every tick you hold a block eats away at morale and energy
