my QB is (6'5") 197lbs. Is this going Give my Q B some type of advantage? Or is that just for show on your players profile?

Probably not much of an advantage, if any.

I heard that height and weight factor into acceleration for CB's and WR's. Also some people say roll tall QB's because short one's have their passes batted down at the line more often. I've never seen any evidence to support this so I don't know. At the end of the day a good build is a good build and bad one is a bad one no matter the height and weight

Yeah weight is a big factor in overall speed, but for a Pocket Passer, that's not much of a concern.
