My level 21 WR has 28 SP banked and the following stats:

71.61 speed
61.61 agility
25.61 jumping
28.61 vision
22.61 catching
20 carrying
20 confidence

My next priority is obviously catching, and I can cap it right now if I want to. My question, however, is if I should bank up my SP until the end of the season (or at least up until playoff time) and slowbuild, or if the benefit of saving one or two points here and there is marginal and just pump up the stats for this season.

Cap speed. You're wasting auto level gains holding on to them when you could have reached speed's next cap. Then get to the next cap of agility if you don't wanna touch speed anymore. You may have costed yourself half a point which is worth about 2 SP's from leveling for holding on to your SP's when you could have reached speeds next cap or even agility's next cap. You should never be holding more than 20 SP's unless your holding on to them to gain enough for the next cap. You can definitely get catching higher with training before you put SP's into that.

Don't take this information the wrong way and think I'm trying to tell you how to build a guy but most people try to maximize their level gains by getting their main attribute to the 74 cap or higher before moving on to another attribute when slowbuilding. If your happy with a 71 base speed and don't plan to put any more SP's into that attribute then stay with it since it's your guy but I figured I'd give the advice that most slow build people follow.
