Which setting should I put it on?

I wanna force some fumbles, but I don't wanna miss a huge amount of tackles

you can get by playing on balanced.

Never set it on Force Fumbles unless you have very high tackling and strength. Youll end up just missing a lot of tackles. Set it on wrap up for now until your stats are higher then change it to balanced. Wrap up will guarantee more tackles and more xp to level up
