Should I increase it for training or just let it be? Even when I'm kicking 25+ pats, my energy still isn't at 10% so he should be fine?

You don't need to worry about stamina for a while. I have 30 on my kicker, but I've only trained it when I've had nothing else to train.

Stamina is important, but not yet for the OP's level, and not much attention needs to be placed. But it's still important. You don't want to be the ass when you can't make the game-winning 30 yarder at the end of the 4th because you're down to 10 energy. And it happens plenty of times.
My Kicker currently has 18 stamina, and there's still some games that he finishes a little low on energy.
