I had planned on getting vision up to 20 or so to combat the drops I'm seeing (10 in 2 games), and then capping speed. if that seems stupid, please let me know what you think I should do as I'm torn.

Since you have already started putting points in catching, you need to continue to do so until Catching exceeds 48. Then you can either continue Catching to 61 or switch to another skill such as vision, speed, or agility and take it to 48. By taking advantage of these "soft caps" you'll improve your player's long-term growth. All low level receivers are going to drop the ball...don't let it psych you in to debilitating your player's later career by scattering SPs all over the place.
