Have a pretty new D-end I'm building? Does the Blocking attribute still help defensive players shed blocks? If so, how much is it worth building?

Bort stated a few seasons back that it plays a minor role in helping shed blocks. That being said I would not even think about with a low level DE. Focus should be on STR/SPD/AGI at this point.
