I've been having some problems in the past year or so with too many deflected passes. Is there anything I can do with the tactics, either individually with the QB or through the team AI, to cut down on deflected passes? Will bullet passing help? What in a QB build can help to reduce deflected passes?

Could try throwing into triple coverage, that seems to help.
However, in GLB, deflections are the ONLY pass defense. QB's never get hit while throwing the ball, and very, very rarely throw a bad pass...so take that into account.

A pass deflect could mean a lot of different things.
QB settings or arm strength like mention by kingofgod, or even low vision. If the QB's vision is low he can't anticipate the Wr as well. Could be a poor O line so the QB is hurried a lot and that will effect his passing accuracy.
A slow WR or one that is low on agility or vision also. Slow WR vs a fast and agile CB means a lot of PD. If a WR's agility is low then they can't make their cuts as quickly and can't keep their speed.
Play calling also. Are the receivers routes set to come back to the ball or are they just running straight up the field? Try shortening the routes and running curls or hooks.

QB Tactics - set Passing Style to Medium and do not favor the long ball
