Tried it a few seasons ago when the league was full of douches who didn't want to participate, haven't tried it since.

That's only 1 LB, usually there would be 3 on an "all conference" team.
I would agree that that LB is having a better season than mine, but right now I'm not sure there are 3 LBs in our conference who are doing better.
I'm willing to be proven wrong though

I don't even think my K is that good yet, just has a big leg (74 str, 7 big bood SA). Not that his kicking stinks (71), but its not near what a lot of Ks in this league are at (as proven by their "kicking" bars being bigger).
I have had a few touchbacks on KOs though, going for the field position kicker.

Just fill the team up with the offenses of AA and KJ. Fill the defenses up with players from teams that are not making the playoffs. Seems that is where are the stats are.

I'd say that Harry O'Toole (OG) (http://goallineblitz.com/game/player.pl?player_id=313388) has a pretty decent case with 285 pancakes to make the "all league" team and he isn't on AA or KJ.
I'd also submit that Chris Spartan (LB) is having a pretty good year with 120 tackles, 6 hurries, 2 sacks, 21 TFL, 8 PD, 3 INT (2 Int-TD), 3 DTD (total), 2 FF, & 1 FR, although he does also have 13 missed tackles.
