What build type is best suited for each DE? Is the RE the pass rusher and the LE the strong run blocker? I forget which is which lol

LDE is considered a "run stopping" DE only because, thus far, the majority of runs went to the offensive right (defensive left) because that's how it was coded.
The big "lie" going around is that you HAVE to have a very strong DE playing LDE to be able to defend the run (due to the consistent double teams from the RT & TE). It was false then and it's even more false now.
I'd find DEs that are heavy on agility, almost as heavy on speed and with good vision and plug them in on both sides. You don't need 80+ strength to defend the run well.

i have no idea simply because i havent ever seen a DT that stopped strength at the soft cap. but if it works for a LDE that is dealing with ROT/TE/FBs then it should(just my guess) work better for a DT that also has access to wall and break through

Actually all the best DTs I know are far more agility heavy then strength.
