All are 4-3.

1. Cover 2 Man Strong Stack
2. Cover 0 Man Weak MLB Blitz
3. Cover 2 Man ROLB Blitz (possibly FS blitz, but might just be a pre-snap read)
4. Cover 2 Man Weak ROLB Blitz
5. Same as 2
6. Cover 2 Zone Strong Destack
7. Cover 2 Zone Destack MLB Blitz

if you are O.C. you can call like here (number 1) to strong i formation and pass. I mean can you set up somehow this fake run or how that play works. So can you set up that if 3 and short (or else) use i formation strong and fake the run and just pass?

No. Offense is pretty limited in what you can call. Your options are:

Pass Short
Pass Medium
Pass Long
Inside Run
Off-Tackle
Pitch
Goal Line
Field Goal
Punt

You can not directly specify a formation or a playcall, though as there is only one Off-Tackle, Goal Line, Field Goal and Punt play each, calling one of those effectively calls your formation.

Yeah, we aren't to the trade/cut deadline yet (week 12).

If they've been inactive more than a week you won't lose chemistry for cutting them, either.

4 & 5 are both the infamous Weak I Strongside Pitch - the formation that Bort just posted a notice about adding two new plays to, so that D may be somewhat obsolete soon. It's Cover 0, the difference is #4 doesn't blitz, it just lets the unblocked CB make the play and #5 has some LB blitzes.

1 is the weakside pitch out of Singleback 3WR. The D is 3-3-5 Cover 2, weakside, which ironically is one of the best defenses against this play (this D with a CB3 blitz will nuke this play for sure, though it's dangerous if a pass is thrown), but the players totally muck up the execution. 1 WR holds 3 defensive backs at bay and the other WR keeps the ROLB from getting to the ball carrier. Terrible performance by the D. Could be vision problems in that they couldn't see what to do or maybe they just lack the agility to make the necessary moves.

2 is the same formation with the same defense, except that this time they send the ROLB (bad idea) and MLB (not as bad an idea) on the blitz. This is the Double Corner long pass play, though the blitz forces an early throw. The CB doesn't blanket the WR (vision or agility again?) and the ROLB is blitzing so he can't help and it's complete for 7. You may notice that the HB is also wide open thanks to the ROLB blitz as well.

3 is a standard I form 2WR throwing into a fairly typical 4-3 man strong stack. Again, the D is a decent call, but the LB fails to make the play. If he makes that tackle, it's at most a 4 yard gain, probably more like 2 + a dive to 3. He misses and again the defensive backs have vision or agility problems and don't get it done either. The SS eventually brings him down from behind, but he should never have let the HB get ahead of him anyhow.

question:
http://goallineblitz.com/game/replay.pl?game_id=175860&pbp_id=5367045

in this play asked above -

Sarg says it is cover 2 man strong sack

i thought that in a cover 2; the FS and SS would attempt to not let anyone get behind them...but the SS is running up to cover the TE - and the WR is in the clear - leading to a likely TD if the pass is caught.

i don't think i really understand what a cover 2 is

In a cover 2, the SS and FS drop back and each play the deep zone for their half of the field.

The problem with the sim is that the SS will bite on the TE and let a streaking WR get behind him (which is going on here, I believe).
